A: From a functional perspective there's really little practical difference between a standard surface bolt and one that would be titled the Dutch door bolt.
However a Dutch door Bolt is going to include a few important modifications:
First - the rod end will be chamfered to allow the two leaves of door tightly drawn in flush alignment together.
Second the finished strike, called a "Half Moon Rim Strike", is the standard strike for a rim application (but if your top leaf locks on top of a shelf atached to the lower lead, you would use the mortise strike) as seen here:

and will allow sufficient tolerance provided in strike opening to allow for misalignment of door leaves and also prevents binding of bolt.
Third - while available in lengths up to 36", the standard length is about 4-3/8" as there is no need for a dutch door bolt to be especially long.
