Q: why does it make a buzz noise when the release is not pushed

A: That's an interesting question - I would like to know what power supply or transformer you are using, what switch you are using as well.

It is very likely that you have a normally closed push button so that the strike is being powered continuously creating the buzzing sound which is a sign of ac voltage.
